
Oktoberfest is Germanys festival beer. We use a blend of Light, Amber, and wheat dry malt extracts to produce a bright copper color lager with a creamy white head. This beer is nicely balanced with a traditional blend of Hallertauer, Hersbrucker, and Tettnanger hops. This is one of our personal favorites for introducing new people to fine homebrew. You will find that all great beers have two things in common: the finest ingredients and the best recipes. Ours have both! With freshness and quality in mind, we produce all our kits on demand. Does anyone know where I can buy fresh cherry peppers in Austin Texas or vicinity?
I want to make stuffed cherry peppers and I really don't like the jar type. Thanks for the help. PS: have tried Whole Foods and Central Market.

Tony's New Zealand IPA All Grain Homebrew Brew in a Bag Part 2 of 2

Tony from Austin Homebrew Supply gave me a taste of this homebrew he made and I just had to try making it myself. He made up the recipe for me and even gave my grains his special double-crush that he uses with his brew in a bags. Thanks Tony! Tony's New Zealand IPA contains: 11lbs American Two-Row Pale Malt .5 lbs American Crystal 60L .5 lbs Munich Malt .25lbs American Crystal 120L .25lbs American Crystal 20L He also puts in 1 lb of corn sugar (dextrose) but I did not add this. His beer is 7.1% ABV. Without the sugar, mine should hit 6% ABV. Hops: 1oz Green Bullet 60min .75oz Nelson Sauvin 15min .5oz Riwaka 15min .75oz Nelson Sauvin 5min .5oz Riwaka 5min Dry Hop for 7 days after fermentation is complete: 1oz Glacier 1oz Citra Yeast: White Labs Australian Ale Yeast WLP009 - I'm holding the fermentation temperature on this brew to 66F, 19C. Also Tony uses 4 Beano tablets in the primary fermenter to convert more of the complex carbs into simple sugars that can be fermented out by the yeast. This lowers the "bad carbs" in the beer and gives it a bit of dryness in this otherwise hugely malty beer. I decided to add only 3 Beano tablets because Tony cautioned that too much Beano can cause gastric distress, argh, better safe than sorry, LOL! For the first half of this brew day, please see Part 1.
